Adobo Tortilla Soup
Started off as a terrible vegetarian dish using king oyster mushrooms, we modified it to our tastes until we liked it
Ingredients
- 1 lbs - Beef stew meat, or any other beef, in ΒΌ chunks
- 1 onion, chopped
- 3 garlic cloves, minced
- 3-4 chipotle chilies in adobo sauce, chopped
- 1 can - black beans, drained
- 2 tbs - beef bouillon
- 1 tsp - cumin
- 1 tsp - Mexican oregano
- 1 cup - corn
- 1 block - cream cheese
- 1 avocado, sliced
- 1 bunch - cilantro, chopped
- tortilla chips
- salt
- ground black pepper
Steps
- Put large pot on medium high heat, add beef, salt and pepper, and sear beef until browned. We want some of that fond.
- After beef is cooked, add onion, garlic, and adobo chilies in the pot with the beef. Cook until onions are translucent.
- Add 4 cups of water along with black beans, beef bouillon, cumin, and Mexican oregano. Allow to cook for 15 minutes.
- Lower heat to medium low. Add corn and cream cheese, and stir until cream cheese is dissolved in. You may have to use a whisk.
- Ladle into bowl, and top with pinch of cilantro and avocado. Serve!
