Adobo Tortilla Soup

Started off as a terrible vegetarian dish using king oyster mushrooms, we modified it to our tastes until we liked it

  1. Put large pot on medium high heat, add beef, salt and pepper, and sear beef until browned. We want some of that fond.
  2. After beef is cooked, add onion, garlic, and adobo chilies in the pot with the beef. Cook until onions are translucent.
  3. Add 4 cups of water along with black beans, beef bouillon, cumin, and Mexican oregano. Allow to cook for 15 minutes.
  4. Lower heat to medium low. Add corn and cream cheese, and stir until cream cheese is dissolved in. You may have to use a whisk.
  5. Ladle into bowl, and top with pinch of cilantro and avocado. Serve!
