Asian Salmon Bowl
A protein-filled Asian bowl that is quite different from other meals on here. Found from Kale Junkie with some changes.
Ingredients
- 1 cup - white rice
- 2 tbs - chili crisp, like Lao Gan Ma Spicy Chili Crisp
- 1 lb - Salmon, or the cost effective Steelhead Trout
- 1 tsp - garlic powder
- 1 English cucumber, sliced
- 1 cup - Edamame, unshelled
- Green onions, sliced
- 2 avocados, sliced or small chunks
- salt and pepper
Asian Dressing
- ¼ cup - olive oil
- ¼ cup - sesame oil
- ¼ cup - soy sauce
- ¼ cup - rice vinegar
- 2 tbs - honey
- 1 ½ tsp - ground ginger
- ½ tsp - salt
Steps
- Using a rice cooker, put rice with 1 ½ cup of water. Cook until done.
- Season the salmon with garlic powder, salt, and pepper.
- With a skillet on medium heat, sear the salmon until cooked through. Once done cooking, separate the fish into bitable chunks.
- While the salmon cooks, blend together the Asian dressing ingredients until well mixed.
- Assemble into a bowl with rice, salmon, cucumber, edamame, avocado, Asian dressing and topped with green onions.
