Black Bean Burgers
These are delicious. I hate how much work they are to make, but they are too good not to make. Inspired from Serious Eats.
Ingredients
- 2 (15 oz) cans - black beans, rinsed and drained
- 4 tbs - canola oil
- 1 onion, chopped
- 1 bell pepper, chopped
- 3 garlic cloves, minced
- 3 chipotle chile in adobo sauce, chopped
- ½ cup - cotija cheese
- ¾ cup panko bread crumbs
- 1 egg
- 2 tbs mayo
- 4 - 6 buns
- 4 - 6 slices - American cheese
- condiments as desired
Steps
- Air fry the beans until they are cracking but not completely dry.
- Put a skillet on over medium heat. Drizzle oil and fry onions and bell pepper, until caramelized.
- Add chilis and garlic into the skillet. Once cooked through, remove and cool.
- Take the cooked beans and mash them with a potato masher to create a more doughy consistency. Mix with the cooked onion / bell pepper mixture once cooled.
- Add cotija, panko, egg and mayo and mix well.
- Form into 4 - 6 burger patties.
- On a large skillet over medium head, add oil and fry both sides of the paddies. You want each side browned and toasted.
- Serve on a bun with cheese and any condiments you like.
