Grandma's Soft Tacos

Made by my grandma, who then taught my father, and then taught me. These simple little guys are always filling and super tasty.

  1. Chop the potatoes to ¼ inch cubes. Chop the onion. Slice the lettuce in longer strips good for laying on a taco.
  2. Put the ground beef in a 5 quart or larger pot. Cook on medium high heat until browned. Drain the fat. Put pot back on the stove, and mix in onion, potatoes, garlic powder, Sazon Goya, Mexican oregano, and chicken bouillon. Fill pot with water until ingredients are submerged.
  3. While the pot simmers, turn the griddle to 350°F and lightly toast both sides of the corn tortilla. When done, place stacked on a plate.
  4. When the potatoes are soft, the meal is done cooking. Nestle ground beef mixture, drained, in the corn tortilla, and top with cheese and lettuce.
