Lemon or Lime Super Juice
This is the way to make a bunch more juice out of fewer lemons or limes. This is super useful if you need, say, a lot of lemon-mixed drinks for a party. It's a bit a science-y but it works! This technique comes from Kevin Kos.
Lemon Juice
Ingredients
- lemons, 1 equals about a cup of juice
- citric acid, same weight of lemon peels
- water, 16x the weight of lemon peels
Lime Juice
Ingredients
- limes, 1 equals about a cup of juice
- citric acid, 2⁄3 weight of lime peels
- malic acid, ⅓ the weight of lime peels
- water, 16x the weight of lime peels
Steps
- Peel the citrus, avoiding scraping the white pith as much as possible.
- Weigh the peels. This is your baseline number.
- Place the peels in a glass bowl with the specified acids and their amount according to the citrus peel weight. Mix well.
- Allow to sit for 2 hours. This will pull out oils from the peels.
- Place peels in blender, use some water to rinse out the bowl and pour that in the blender along with the remaining water, and blend.
- Blend for 30 seconds, then strain. Now you are ready to make some tasty drinks.
