NY Style Pizza Dough

This recipe makes 2 - 16" pizzas

2 Days Before

Make poolish with 100g Water, 100g Flour, and a pinch of yeast.

1 Day Before

Mix poolish with 266g Water. Mix dry ingredient with remaining 480g Flour.

Day Of

Mix it all, and bake for 5 minutes at 500 Fahrenheit on pizza stone/steel
