Peanut Brittle
William's favorite! A crunchy peanut treat. Snagged this recipe from Tastes Better From Scratch.
Ingredients
- 2 cups - sugar
- 1 cup - light corn syrup
- ½ cup - water
- 2 tbs - butter
- 1 ½ tsp - baking soda
- 1 ½ tsp - vanilla
Steps
- Have every ingredient ready as in some steps, you have to act quickly and don't have time to measure out then.
- Put parchment paper on a sheet pan, for later.
- Add sugar and water to a medium saucepan. Stir well until mixed, then add in corn syrup. Cook mixture over medium heat max, stirring occasionally, until it comes to a gentle boil.
- Cook, stirring occasionally until the candy thermometer reaches 250°F.
- Add the peanuts and stir the mixture constantly until the candy thermometer reaches 300°F.
- Remove mixture from heat and immediately stir in butter, baking soda and vanilla. The mixture will foam and change texture.
- Carefully pour the hot mixture onto parchment laid sheet pan.
- Use a knife or spoon to quickly spread the mixture into an even layer.
- Allow to cool completely before breaking apart and eating.
