Porky Refried Beans
My wife never like refried beans until we went to Cabo and ate some like these! You'll need saved bacon fat to make these. Thanks for the recipe Kevin.
Ingredients
- 1 lb - dried pinto beans
- 2 tps - onion powder
- 2 tps - ancho chili powder
- 2 tps - garlic powder
- ¼ cup - bacon fat
Steps
- Pick through dry beans for any rocks or debris. Rinse the beans.
- Cover beans with 2 inches of water in a large pot. Add onion powder, chili powder, and garlic powder.
- Bring to a boil, reduce heat to simmer, cover and cook until beans are tender, about 2 to 2 ½ hours. Check occasionally if water needs to be added.
- Once beans are tender, drain beans, reserving about a cup or 2 of the bean water. Mash them until they have the refried bean consistency.
- In a large skillet over high heat melt the bacon fat. Add the beans to the skillet. Fry for several minutes, stirring.
- Add enough bean broth and continue stirring until your desired consistency.
- Season with some salt and black pepper if needed.
