Rigatoni D
A Maggiano's copy cat recipe of their delicious Rigatoni D.
Ingredients
- 1 lb - Rigatoni
- 2 tbs - oil
- 2 lbs - baby bella mushrooms
- 1 onion
- 3 tbs - balsamic vinegar
- 3 garlic cloves
- 375 ml - marsala wine
- 2 cups - cooked chicken, such as rotisserie chicken. Chicken thighs are better.
- 1 tsp - Better Than Bouillon, or some other chicken bouillon
- 1 ½ cup - heavy cream
- ¼ cup - Parmesan, grated
- 1 tsp - sodium citrate
- 2 tbs - butter
- 2 tbs - fresh basil
- salt and pepper to taste
Steps
- Prepare pot of water for rigatoni. While waiting for that to boil, heat up oil. Once hot, add mushrooms and onions, and cook for they are caramelized and mushrooms have shrunk significantly.
- Add balsamic vinegar, and cook until it is evaporated. Add garlic and cook for half a minute.
- Pour marsala wine and scrap off the fond. Add Better Than Bouillon, ½ cup of water, and bring to a boil. Heat until liquid is about half.
- Add heavy cream, Parmesan, sodium citrate, butter until heated through. Add cooked chicken and heat.
- Toss in fresh basil, stir, then serve.
