Turkey Larb

We found this recipe at Fun Without Fodmaps when we were testing food sensitivities. It was so good, we had to keep making it. This version breaks the low FODMAP traits.

  1. Start cooking the rice in a rice cooker so that it will be done by the end of the meal.
  2. On medium heat, add canola oil and ground turkey. Cook until done.
  3. Add onion, bell pepper, salt, and pepper. Cook until soft.
  4. Add lime juice, sriracha, and fish sauce. Cook until liquid has evaporated.
  5. In another pan, cook the eggs in oil and scramble.
  6. To finish, place in a bowl the rice, turkey mixture, egg and top with cilantro. Serve with soy sauce.
